CTG Hospitality Inc., 5948 Linglestown Rd. Harrisburg, June 5. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Food employees observed in kitchen area, not wearing proper hair restraints, such as nets, hats, or beard covers. Observed food ingredient storage containers and bottles, through-out the facility, is not labeled with the common name of the food. Observed no date marking on any commercially processed refrigerated, ready to eat foods through-out the facility. Thermometers for ensuring proper temperatures of food are not available or readily accessible. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Loose rubber door gaskets observed on the on the upright refrigerator two door cooling unit. Unwrapped and unprotected single use straws stored in the customer area. The handwash sink located in the lady's restroom area does not have water at a temperature of at least 100°F. Soap was not available at the handwash sink in the kitchen area. Paper towel dispenser empty at the handwash sink in the kitchen area. The handwash sink in the bar area does not have single use towels, continuous towels, or air drying device. No sign or poster posted at the handwash sink in the kitchen and bar area to remind food employees to wash their hands. Observed ceiling tiles collapsing in the back entrance in the kitchen area.

Kimlee's, 1561 State Route 209, Suite B, Millersburg, June 5. Fail. The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. Observed gallon of expired whole milk in refrigerator in the front service area with use by date 5/31. Milk was discarded by person in charge. Observed numerous small insects/bugs in dirty container storing a can of condensed milk for coffee station in front service area. Observed raw eggs stored on top shelf above produce in the walk-in cooler with potential for cross-contamination. Observed multiple single-use containers/bowls without a handle being used as scoops in buckets of sugar and rice. Scoop being stored in the ice machine in front service area with handle touching and/or buried beneath the ice. Two tongs in cooking area between grill and fryers observed stored in a container of water temped at 79°F and not at 135°F or above as required. Observed wet wiping cloths stored on cutting board of bain-marie unit cooking area and not in sanitizer solution. Observed boxes of rice and rice paper stored directly on the floor underneath storage racks along wall facing refrigerator, rather than 6 inches off of the floor as required. Observed multiple boxes of beef and tubs of chicken stored directly on the floor and underneath racks in the walk-in freezer, rather than 6 inches of the floor as required. Observed no date marking on any refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours in the walk-in cooler. Observed large cover/lid for bain-marie unit in cooking area with broken, peeling, hanging interior surface and repaired with masking tape. Cover is in need of proper repair or replacement. Observed the following on food contact surfaces: Multiple containers storing lids with accumulation of old food debris on bottom surface and is not being cleaned frequently; Two tongs stored in container of dirty water in between grill and fryers; Small Cadco oven in cooking area with large accumulation of caked on food debris on interior surfaces and is in need of cleaning; Blender stored on prep table in kitchen area with old food residue and is not being cleaned frequently. Buckets storing sauces in walk-in cooler with accumulation of old food residue and need cleaning. Multiple containers storing dirty utensils throughout the kitchen area and are in need of cleaning. Manual can opener blade on prep table near chest freezer in kitchen area with accumulation of old food residue. 4 small Mandoline slicers stored dirty, hanging near chest freezer with old food residue on blades. Automatic slicer blade with accumulation of old food debris. Observed the following on non-food contact surfaces in need of cleaning: Floor drains underneath three compartment sink and mechanical dishwasher have accumulation of dirt/food debris. Wall above prep table storing automatic slicer with accumulation of old food residue. Observed clean dish racks stored on the floor next to mechanical dishwasher. Observed clean stainless-steel pans/containers on racks near mechanical dishwasher, stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Observed clean, large pans stored on cardboard directly on the floor underneath storage rack in cooking area near freezer, and not 6 inches above the floor. Observed dirty cardboard being utilized as a shelf covering on shelving of prep tables in the kitchen area, which is not an easily cleanable surface.
